My favorite foods are chocolate, garlic bread with cheese and pizza. Vegetables have never ranked in my top ten favorite foods. Snacking on a sliced green pepper with ranch dip is as close as I had ever been to my daily servings of veggies. Family health issues changed all that.
An interest in living a healthier lifestyle began on a small scale. The change started with learning how to improve our diet. So began the process of discovering how to create a delicious meal filled with vegetables.
It was obvious that different food would be making an appearance on our grocery list. My husband, Tom, purchased an encyclopedia of vegetables. While we experiment with cooking fresh vegetables, he regales me with the nutrition of the different ingredients we are using.
Lo and behold, I discovered that I really enjoy vegetable dishes. The preparation makes a difference. Veggies are now at the top of our grocery list. I still love pizza so for my birthday Tom created pizza soup. Not only does the pizza soup smell heavenly while it simmers but it is one of my favorite recipes, simple and full of vegetables.
Thanks to the knowledge that we have gained, Tom and I are succeeding in our lifestyle changes. The more we understand food and nutrition, the more we are in tune with our bodies. Knowledge has been the key to unlocking the healthy person within.
Super Simple Pizza Soup
Ingredients:
1) 3 oz. package of crumbled bacon bits
1) 14.5 oz. can diced tomatoes
1) 10.5 oz. cans condensed tomato soup
1 /2 cup of water
1 /2 tsp. garlic powder
1 /2 tsp. onion powder
1 tbsp. sugar
1 tsp Italian seasoning
1 /2 cup grated Parmesan cheese
1. Add all the ingredients to a saucepan.
2. Simmer for 10 minutes. Stir occasionally.
3. Serve. Makes about 4 servings.
